The crème de la crème of our spumante aged 24 months on lees in the bottle to give more body, more brioche and butter croissants and raspberry cream. Made on 100% sangiovese grapes from 2019 which gives notes of creamy raspberries and Amarena cherries. 0g/l sugar dosage which makes it crisp with subtle red fruity notes. These bottles are numbered by hand and every 6th bottle is decorated.

The grapes are harvested 550m above sea level - almost the highest field in Chianti Classico. We pick the grapes a little early to keep some acid and keep the spumante crisp. All bottles are capped by hand for the second fermentation and after maturing for 24 months on lees we carefully turn all the bottles in wooden pupitres to catch the lees in the bottle neck. The lees are disgorged out of the bottle and we top our spumante up with more spumante – 0g/l dosage. The we hand label, foil and number them – definitely made with passion!
